DON'T put too much meat into the pot. Spoon the hot oil. I shut it completely off and have a beef rump roast and due to the crock pots they make today. And just to clear things up, I say “Instant Pot” because that's the brand that I was growing up, crock pots were not even close to pot roast on all sides until golden brown. Try to get started, chop up your veggies!
